Pearl Cous Cous and Vegetable Salad

Our chefs roasted zucchini, capsicums, sweet potato and eggplant before tossing it with pearl couscous, toasted fennel seeds, fetta and smashed pistachio nuts. Toss with lemon and oregano dressing.

Must be kept chilled. Best 1-3 Days.

Ingredients: Pearl couscous, sweet potato, zucchini, eggplant, green capsicum, red capsicum, pistachio nuts, fetta cheese, olive oil, salt, pepper and vinegar.
