Gluten Free and super healthy! This sensational salad is a meal in itself or serve it next to your favorite main meal. Packed full of quinoa, brown rice, lentils and roasted butternut pumpkin, we add dried cranberries, mint, parsley as well as currents, pepitas and nuts. This also make a great lunch for the office. Must be kept chilled. Best eaten within 3 days.

Ingredients: pumpkin, cranberries, brown rice, quinoa, lentils, mint, parsley, pumpkin seeds, pine nuts, slivered almonds, sunflower seeds, currants, olive oil, lemon juice, salt and pepper.
